"Neapolitan Pizza"?

A true Neapolitan Pizza
must be made in a wood
burning oven. Gas, coal
or electric ovens do not
conform to the true
Neapolitan Pizza.

Use of proper
ingredients are
important. We use "00"
flour, San-Marzano
tomatoes, all natural
buffalo mozzarella,
fresh basil salt and
yeast. All of our
ingredients are imported
from Italy.

pizzas is a technique
perfected by our chefs.
Every pizza is
hand-prepared with fresh
ingredients, contains a
fragrant aroma, tender
texture and a
fire-kissed crust that
is cooked at a

approximately 800
degrees for 2 minutes.

Sam's Recipe for September:
FARM STAND Tomato
SALAD
Chef Sam is not only self taught,
but creates signature dishes with a “new-school”
Italian flavor that are beautifully displayed
and memorably delicious! Here's a great dish
that you can cook at your house!
Ingredients
4-5 Lbs
Heirloom tomatoes cut into large cubes
1 Small red onion diced
3 Ears of corn grilled and cut off cob
1 Bunch of Scallions washed and sliced
thin
2 Cloves garlic sliced
1/4 cup Rice Vinegar
1/4 cup Champagne Vinegar
1 Tsp Mustard seeds whole
1 Tbs Fennel seeds whole
1 Quarter cup brown sugar
3/4 quarters cup of Extra virgin olive
oil
Salt and Pepper to taste
To Prepare:
Combine brown
sugar, rice vinegar, champagne vinegar, fennel
seed and mustard seed and cook over medium heat
until sugar is melted. Set aside to steep for 5
minutes. Remove cover and allow to cool to room
temperature
In a large bowl
combine tomatoes, onions, corn, scallions and
garlic. Add vinegar mixture and oil to
bowl. Season with salt and pepper to taste and
refrigerate 2-4 hours before serving.
