The nose of this wine is full of honey, lychee fruit and floral notes. From the very first sip there is an avalanche of peach notes. All the fruit in the nose and through the palate gives the impression of sweetness. In actuality this offering is well balanced and presents tremendous acidity. This wine will pair well white meats such as grilled chicken. It’ll also be an excellent match for spicy Asian dishes as well as curry.

Did You Know......
The edible flower of a zucchini is a delicate and ephemeral treat!

Zucchini  blossoms are one of the most delightful summer vegetables. They should look firm and fresh, and ideally should be just slightly open.

They're quite perishable, and should be used the day they're bought, or at the most the day after. If your local supermarket doesn't carry zucchini blossoms, you may be able to get them from a farmers' market, or from a farm produce stand. As a last resort, if you have a vegetable patch, you can plant some zucchini. It's worth the effort.

When you get them home put them in the crisper section of the refrigerator until it comes time to cook them. Then wash them gently, pat them dry, and remove the pistils. You're now ready to proceed! Check out a great recipe that is one of my favorites!

Chef Sam's Recipe for July :

Crispy Zucchini Blossoms with Burrata & Heirloom Tomato Salad and Garlic Bruschetta

Serves 4


Chef Sam is not only self taught, but creates signature dishes with a “new-school” Italian flavor that are
beautifully displayed and memorably delicious! Here's a great dish that you can cook at your house!

 
 
Ingredients
Frito Misto Batter
1 C semolina
1 C Flour
2 C Soda Water
4 Tsp baking powder
1 Tsp Salt
2 Tbsp Extra Virgin Olive Oil
Sift Ingredients and whisk until smooth with soda water
 
12 Zucchini Blossoms
1 Ball Burrata cut in ½ inch pieces
1 Chiabatta loaf or Baguette
Oil to Fry
 
Tomato Salad
1lb heirloom tomatoes
1/2 small red onion
¼ cup vinegar
2 tbsp sea salt
½ tbsp brown sugar
½ c. oil
2 Cloves garlic sliced thin
½ tsp fennel seed
2 bunch scallion sliced thin
1 tsp fresh oregano chopped
sea salt and pepper
 

Procedure for tomato salad:
Cut tomatoes into ½ inch pieces
Set aside
Cut red onion into 1/8 inch dice
Add to tomatoes
In a pot on stove bring vinegar, salt, and brown sugar to a simmer and set aside.
In another pot heat garlic, fennel seeds until garlic slightly browns.
Add oil mixture to reserved vinegar mixture and allow to cool.
add vinaigrette to tomato salad mixture toss with oregano and scallion season with salt and pepper to taste and set aside to serve.

Procedure for zucchini blossom:
In a deep heavy bottom skillet add enough oil to cover bottom
with1 ½ inch.
Heat to 375.
Remove pistil from zucchini blossoms and stuff with buratta cheese.
Dust with flour and dredge in Frito Misto batter and place in skillet
with hot oil.
Fry for about 30 sec on each side or until golden brown.
place on plate lined with paper towel until ready to serve

Serve with garlic bread or Bruschetta. and tomato salad
