Just so you know....
The Right Way to Cut
Butternut Squash

Set a sharp chef’s knife into the squash at the base of the neck. Tap the spine of the knife with a meat mallet to insert the blade securely. Cut the neck off the body. Set the squash body on its base. With a peeler or utility knife, peel downward toward the work surface. Repeat with neck.
Halve the base and neck lengthwise; scoop out seeds. Set both on long, flat sides and slice 1/2 inch thick, leaning on the knife’s spine (use a folded dish towel to protect your hands, if needed).
Dice into cubes.

Chef Sam's Recipe of the Month:


Butternut Squash and Apple Soup with Sage Mascarpone'

Chef Sam  is not only self taught, but creates signature dishes with a “new-school” Italian flavor that are beautifully displayed and memorably delicious! See some of his signature dishes here.

Ingredients: Procedure:
Cut squash into 1 inch chunks. In large pot, melt butter. Add onion and cook until translucent, about 8 minutes. Add squash, apple and stock. Bring to a simmer and cook until squash is tender. Remove squash chunks with slotted spoon and place in a blender and pruree. Return blended squash to pot. Stir and season with nutmeg, salt and pepper.

Top each serving with 1 tbs. of Mascarpone' mixture.

Serves 4 - 6
 

1 Butternut Squash, peeled
1 Fuji Apple, peeled and chopped
Nutmeg
2 Tbs Unsalted Butter
Salt and Pepper
1 Onion chopped
6 Cups Chicken Stock
6 oz. Mascarpone' Cheese, room temp. mixed
with 1 Tsp chopped Sage
