When
choosing cherries for your
recipe, make sure that they have
soft, pliable stems and are
plump and juicy! Also, do not
wash them until you are ready to
use them!
Added Tip...If you don't have a
cherry pitter, use a chop stick!
You must have one somewhere in
that junk drawer... Works like a
charm! |

Cherry Rhubarb Crisp
Nothing says Summer like
cherries in July! Try this
delicious
dessert compliments of Chef Sam. |

pints chopped fresh rhubarb |
|

pints cherries, pitted and
sliced |
|
Moscato Di Asti - Italian
Dessert Wine |
|

1/2 cups granulated sugar |
|
|
|
|

tbl. water, dissolve 2 tbl. corn
starch |
|
 |
Fragrant, intensely fruity
bouquet,
offset by musky notes, leads to
a
refined sweetness supported by
an excellent acid balance on the
palate, with a suggestion of
effervescence in the texture.
The
finish is clean and crisp, with
a
persistent flavor of grape and
citrus characteristic of the
variety. |

1/3 cup cherry liquor or cherry
juice |
|
Procedure:
1) Chop rhubarb
2) Slice and pit cherries
3) Boil rhubarb with cherry
liquor or cherry juice and sugar
until soft. When mixture comes
to a boil, add corn starch.
4) Mix product with cherries,
mixing very well.
5) Get Ranekin and put batter
around it. Sugar this, use very
little batter.
6) Make a crust topping of
butter, sugar, cinnamon and
oatmeal |
